Unique Recycling Idea – Recycled Wine

Chefs in the United States have come up with recycling ideas to take care of the leftover wine in their restaurants. Russell Moore, chef and owner of the Camino restaurant in Oakland, uses leftover wine to make his own red wine vinegar and has recently added to his wine recycling ideas by making white wine vinegar as well. This recycling idea has proved quite thrifty as Russell hasn't bought a bottle of vinegar for his restaurant since it opened three years ago. Chef Cesare Casella from Salumeria Rossi, New York City has his own unique recycling idea that he uses, the chef uses leftover wine to make marinades for dishes like pork loin or lamb shanks. Clark Frasier from Arrows Restaurant, Maine uses his individual wine recycling ideas and creates granitas and sorbets from leftover Champagne, Riesling and sweet wines.
